Description
A simple, buttery strawberry cake perfect for using up an abundance of strawberries. Easy to make, light, and full of berry goodness!
Ingredients
1½ cups all-purpose flour
1½ teaspoons baking powder
½ teaspoon salt
6 tablespoons unsalted butter, softened
1 cup plus 2 tablespoons sugar, divided
1 large egg
1 teaspoon vanilla extract
½ cup milk
Fresh strawberries (halved for topping)
Instructions
Whisk flour, baking powder, and salt.
Cream butter and sugar until pale and fluffy.
Beat in egg and vanilla.
Alternate adding flour mixture and milk; mix gently.
Spread batter in greased 9-inch pan; arrange strawberries on top.
Sprinkle with sugar.
Bake at 350°F for 10 minutes, then 325°F for 50-60 minutes.
Cool before serving,
Notes
Enjoy warm or at room temperature. Serve plain, or with whipped cream or vanilla ice cream. Best eaten fresh; keeps for a few days in an airtight container.
