Ingredients

1 large egg, 1/4 cup vegetable oil (or butter), 1/2 cup sour cream, 1 tsp vanilla extract, 1/2 cup sugar, 3/4 cup flour, 2 tbsp cornstarch, 1 tsp baking powder, 1/4 tsp baking soda, 1/4 tsp salt, mix-ins of choice


Instructions

  • Preheat oven to 375°F. Grease mini muffin pan.

  • Mix wet ingredients; stir in dry ingredients.

  • Fold in mix-ins.

  • Fill cups 3/4 full.

 

  • Bake 10 minutes or until toothpick comes out clean.

Notes

Use any neutral oil or substitute butter. Add sprinkles, chocolate chips, or poppy seeds for variation.
