A bright and zesty lemon blueberry baked oatmeal, perfect for breakfast or brunch, featuring fresh blueberries, lemon zest, and a tangy yogurt glaze.
Ingredients
2 eggs
1/3 cup maple syrup (or 1/4 cup for lower sugar)
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
Zest and juice from 1 lemon
2 tablespoons melted butter or coconut oil
1 1/4 cups milk (any kind)
2 1/2 cups old-fashioned rolled oats
1 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon poppy seeds (optional)
1 cup fresh blueberries
For the glaze: 1/2 cup Greek yogurt, 1-2 tablespoons powdered sugar, 1 tablespoon lemon juice, zest from 1/2 lemon
Instructions
1. Preheat oven to 350°F. Grease a 9×9 inch baking dish.
2. In a large bowl, whisk eggs, maple syrup, vanilla, almond extract, lemon zest and juice, melted butter, and milk.
3. Add oats, baking powder, salt, and poppy seeds. Fold in blueberries.
4. Pour mixture into dish. Bake 35-40 minutes until set and golden.
5. Let cool 10 minutes. Mix glaze ingredients and drizzle over oatmeal.
6. Slice and serve warm.
Notes
Use dairy-free milk and yogurt for a dairy-free option.
Substitute honey for maple syrup if desired, using slightly less.
Frozen blueberries work well; do not thaw before baking.
Omit the glaze for a less sweet version.
